A decade of hard surfaces has a bill coming due
Walk into almost any restaurant opened in the last fifteen years and the surfaces tell the story before the menu does: polished concrete underfoot, an exposed structural ceiling stripped of tiles, bare brick, a big glazed frontage, a bar and an open kitchen thrown into the same volume. It photographs beautifully and it is acoustically merciless. The average restaurant has grown measurably louder over the same period, drifting from around 68 decibels in the 1990s toward the mid-70s today, and crowdsourced readings from apps like SoundPrint put the New York average near 77 dBA in restaurants and above 80 in bars, well into the range where a normal conversation stops being possible.
The spiral has a name and a trigger point
The reason a loud room feels not merely loud but exhausting is a piece of involuntary human wiring called the Lombard effect: when the background rises, everyone unconsciously raises their own voice to be heard over it. In a reverberant room that behaviour compounds. Each raised voice becomes part of the background that every other table is straining against, so the whole space ratchets upward until a room that opened at a civilised 65 dBA is running at 85 by peak service, with nobody having decided to shout. Research from Pasquale Bottalico's acoustics group at the University of Illinois, published in Scientific Reports, pinned down where the reflex switches on: subjects reported their own speech being disturbed at around 52 dBA of background noise, and their vocal effort began climbing at roughly 57 dBA. The same work tied rising noise to something owners care about directly. Diners reported being willing to spend less time, and less money, as the room got louder.
Reverberation, not volume, is the design lever
Here is the distinction the 2026 wave of hospitality design has finally internalised: the fixable variable is not loudness but reverberation time, the RT60 figure that measures how long a sound takes to decay by 60 decibels. Hard-finish concept restaurants routinely open at an RT60 of 1.2 to 1.6 seconds. Above about one second the Lombard spiral runs freely; below roughly 0.8 seconds it largely breaks, because a voice stops being reinforced by its own echo. Acousticians now design fine dining toward an RT60 of about 0.6 to 0.8 seconds and a sound level of 65 to 70 dBA, and casual rooms toward 0.8 to 1.0 seconds, targets rather than vibes. The tool for getting there is absorption, measured as a material's Noise Reduction Coefficient; anything rated NRC 0.80 or higher counts as genuinely absorptive rather than decorative.
Why the ceiling carries the load
The counterintuitive part is where the absorption has to go. Instinct says line the walls, but in a full restaurant the lower half of every wall is blocked by seated diners, tables and banquette backs, so wall panels can only reach a fraction of the reflected energy. The ceiling has clear line of sight to the entire floor and takes most of the reverberant load. That is why the signature move of the current correction is overhead: acoustic clouds and baffles, felt or recycled-PET panels suspended below a hard slab. Each of these is doing acoustic work while reading as warmth and comfort. Designers now talk about touch, scent and sound as core tools rather than afterthoughts, and the quiet booth has become a desirable table rather than a compromise.
A number worth designing to
The case for treating acoustics as a first-order design decision is not only about pleasantness. Restaurant staff work full shifts inside these rooms, and peaks above 85 dBA edge into the territory that occupational exposure limits are written to protect against. For the growing share of diners with any degree of hearing loss, a room above the Lombard threshold is not merely tiring but genuinely exclusionary; conversation, the entire point of eating together, becomes inaccessible. And the revenue link is now measured, not assumed: quieter rooms hold guests longer and loosen wallets. The lesson of the last decade is that a restaurant cannot absorb its way out of a bad plan after opening night as cheaply as it can design to an RT60 target on paper. The best rooms of 2026 are being tuned to a number, and you can hear it the moment you walk in, because, for once, you can hear the person across the table.
